Puddings and frozen desserts

Almost all the puddings I make are sugar free as they are lower in calories and so my mom can enjoy them as well. These frozen desserts look so good, I just couldn't pass them up!

Diabetic friendly and pretty darned good too. *EDIT*: For some reason that I can't fathom the weight of the package in Canada is 42g but in the States it's 28g's and they seem to work exactly the same.

This fantastic rice pudding requires no baking, and each serving contains only 22% fat. I simply cannot put into words how deliciously creamy this pudding is. Don't let the tofu scare you off. If you like maple, you have to give this a try. I would recommend including the dried cranberries. They add even more depth and sweetness. I got this recipe from my friend Bevrs on the IBS boards at

This is comfort food at its best for me, and it is relatively healthy! This tastes like an apple pie with the crumb topping mixed in! This is a slight adaptation of a recipe in "Fix It and Forget it Lightly" and was credited to Sue Hamilton in Minooka, IL. This is very rich and we liked it topped with fat free cool-whip. The original recipe calls for regular white flour, I just prefer to use whole wheat pastry flour.

My kids saw this in Kraft's "What's Cooking magazine" and decided to make it for dessert when we had their teachers over for lunch. This is a simple make-ahead dessert that appeals to the eye and the stomach! Cook time is freezing time.

This is from my neighbor, Barb Conley, who received it from her sister Jane. Rachel is Barb's daughter, and it is her favorite treat. My little sister said it is "sooo good!" so she insisted I post the recipe!

My mom had this recipe hand written on an old recipe card. It is so tasty and can be fairly low in fat if you use low fat/fat free milk, Cool Whip and chocolate syrup. And it's so good you'll never know the difference! Cook time is chill time.
