    I would rather have a plate of this over spaghetti any day. In the absence of a tomato sauce... the flavors really stand out. This dish originated in the red light districts of Italy when the ladies of the night needed a quick and cheap meal after a long nights work "at the office."

    I make this often for just myself and my DH--especially when I have an abundance of garden cherry tomatoes. This recipe will serve two people but may easily be doubled. I have listed 3 cups uncooked pasta, but you may adjust amount to taste or double the recipe if desired. Plan ahead--the tomato mixture needs to be chilled for a few hours before adding to the pasta to allow the tomatoes to create their own juice and the flavors to blend. You can mix the tomato mixture up in the morning to serve for dinner or even before you leave to work. All amounts may be adjusted to suit taste. The artichokes are only optional, but I like to add them in for a flavor boost. If I have any leftover cooked chicken or turkey I throw it in also. Serve this with crusty bread :)

    A very lemony pasta that can be eaten as a main meal with a salad and toasted bread, or as a side dish with chicken or seafood. It's especially delicious served with pan seared shrimp. I counted a tablespooon of lemon juice/zest as the yield from one medium lemon. So the amount can be a little under- or over if you like it really sour!

    This has been a comfort dish for me for years. Different from the broccoli side dishes that call for cream soup (I love them, too!), this one has a buttery Parmesan sauce that goes great with the broccoli.     A lovely side dish -- from "What's For Dinner" by Maryana Vollstedt. (Note: if you find your orzo sticking to the bottom of the pan after cooking, just remove from the burner and place on a hotpad with the lid on -- let it sit about 5 minutes, then stir.)

    When I left school I worked in an Italian restaurant. For staff meals we were allowed various basic pastas, but we could pay extra for a more ‘luxury’ meal, such as seafood etc. Every Saturday, I’d ‘spoil’ myself and buy salmon pasta. Once I left the job, I would crave this pasta, so I had to try to recreate it as best I could. I do tend to vary the optional items depending on what I have in the fridge, but the basic stays the same. BTW, if you don’t like garlic, you don’t have to add it, but it is definitely worth it!
