I love potato casseroles but DH can only eat a minimal amount of dairy products. This is a collection of potato recipes I have found that have no or minimal dairy, or that I feel I can reduce the amount of dairy products without impacting the flavor.
They serve these at a local restaurant here in TX. This is NOT a casserole! These guys are dressed for dinner in their best jackets! The WHOLE potato, baked and split like a white baked potato. You just gotta try these to believe how simple and delish they really are! Enjoy!
I remember my Grandmother making this marvelous dish over 65 years ago. We were the only vegetarians in our family and therefore Grandma cooked just to please me.
A very easy, simple but tasty side dish.
Young potatoes are especially good.
Use your favourite herbs and spices to top these tasty, crunchy potatoes. Our family love a pinch of cayenne pepper, cumin and caraway seeds. I also like to dab the potatoes with a bit of butter before cooking.
I love potatoes boiled in Old Bay....this is kind of a twist on the typical recipe. It is delicious, easy, and requires minimal ingredients. This one tastes a lot more complicated than it really is! If you are sensitive to spicy foods I would half or even quarter the amount of Old Bay used. We like it spicy so this is a spicy recipe.
My mom has the amazing ability to turn the mundane into something awesome. Never fail, one of my 5 brothers or sisters would ask for this every night. Simple, Tasty, Attractive and goes with just about anything. You can adjust the amounts to your liking as potatoes come in all sizes. Southern all the way!
This is another recipe where we never really measure, so here goes. Leftovers are gooood, especially the next day, cold is fine too. We always have this when we fix Corned Beef and No, It's NOT Chinese Lemon Chicken. We sometimes add crumbled crispy bacon.
A good looking cowboy from Texas gave me this recipe. I count on him for good recipes from the ranch he runs. This is one that I've had for a long time and get many requests for.
It has weird ingredients, but it sure does make a tasty side dish!
