Here's a great scalloped potato recipe that's so easy and absolutely delicious. The leftovers are just as good, maybe even better, the next day. This is one of my favorite and most prepared recipes, from my 1971 Florence Junior Welfare League cookbook.

This is a tried and true Weight Watchers favorite. 4 points per serving.

    Recipe #225768

From Fabulous Fat-Free Cooking. To cut down baking time, you can microwave the scrubbed potatoes for 7 minutes, turning them 4 times for even cooking. Wet the potatoes and bake at 350 degrees for 30 minutes, or until tender. After you've scooped out the potato flesh, save it for another use, such as mashed potatoes or potato pancakes.

A unique potato salad! Potatoes are baked with oil and Italian salad dressing mix instead of boiled. I usually omit the tomato because I find it gets mealy and doesn't hold up. From "Taste of Home"

    Recipe #213625

This is a version of Bubba Gump's cheese fries that I just came up with at the last minute. I had been craving them ever since I had them. Now if you are in the mood for something fattening, tasty, a little spicy and cheesy, this is the dish for you. *You may have to play around with the ingredients to get it right.*

Spicy and delicious! I usually add more green onions to the dipping sauce. You can doctor it up to your tastes.

I was the master mind who created these little gems, I like this because it's a bit different from potato pancakes and you don't have to fry these and you don't have to do much to your leftover potatoes!

    Recipe #96195

If potatoes are on sale, buy a bag and make your own frozen french fries. Prep and cooking times are approximate. The true time will depend, of course, on how many fries you make and how thick you cut them.

    Tastes and smells great.

This recipe is from Company's Coming 'Weekend Cooking' cookbook and is actually designed for the fire pit, but I've adapted it for baking in the oven. Certainly not for those wishing to cut calories!!

You'll never have plain mashed potatoes again! (Well, unless there's gravy, of course!) I add a generous amount of ClubHouse Steakhouse Pepper seasoning as well and sometimes top with cheddar cheese.
