Corn cribs endings needed to be put back up, as the new corn was harvested. Chain saws didn't turn on as we had hoped, and the door handle of the truck fell off in the inside of the truck. I had easily prepared these little beautites to go into the oven and mixed up the easy dressing the night before. We gathered for some good cheer, some laughs, beer, and a couple of potatoes in the gullet to replenish and statisfy as we sat around the wood stove, warm our bodies, feasted, and warmed our souls with good food.

    Exactly as the title says, these are cooked in a muffin or Yorkshire pudding tin! They are a brilliant way to use up leftover potatoes & are so good that it's worth baking or boiling up some potatoes specially!! I use these all the time in our Chambres d'Hotes - it's easy to work out the portions and they freeze beautifully. There is also NO burnt mess in your gratin dishes!     Easy and different potato salad. Great with BBQ. It's a modification of a recipe from my aunt. She adds pickle relish and red onions to hers. I add parsley and scallions instead. It's up to you.
