Dom DeLuise, who passed away on May 4, 2009, was not only a great comedian. He was also an excellent cook. Here is one of his recipes. You can use any kind of Italian sausage you prefer. Be sure not to cover the pan, or the vegetables will be steamed.
Serve with hot Italian bread.
It seems like I make this with my eyes closed already. The family loves it as well as guests. You can make as much as you want and if you are lucky to have leftovers, it's better the second time around. Enjoy!
This is a Latin-style recipe with so much flavor, if you are looking for a wonderful dish to serve to guests, I have to suggest this one, and you can stuff the pork and refrigerate up to 24 hours before roasting. If possible purchase the Crosse and Blackwell red currant jelly brand for this. You can easily double the recipe to four tenderloins to serve 8-10 people if desired. If you love flavor, you will love this pork dish!
