I love creamed spinach, and I have made it many different ways, milk, cream, cream cheese, yogurt, etc. Well I had a little leftover ricotta one night and thought why not. Now, you can easily alter the amounts in this dish. Some people may want theirs more creamy, whereas I like a little less creamy, more garlic and onion or less, but this is based on my taste.
This is from Real Simple Magazine and was amazing! my husband doesn't like sweet potatoes, and I normally don't like spinach but we both loved this. I didn't add the onion because I am not a fan of them. It tastes great with some grilled chicken.

I saw Rachael Ray make this on her show and I thought it looked delicious. I made it tonight and it was OUTSTANDING. The jalapenos definitely add a lot of spice to the cheese sauce, so if you have little ones you may want to remove some of the sauce and keep it separate for them before you add the peppers. The only change I made is that I added 2 cans of drained pinto beans. Rachael says this serves 4, but I think it serves 8 easily.
This recipe sounded very good and it's really simple too. Also a weight watcher meal with 5 points. It only makes one serving, so if you need to make more, just add up the ingredients for amount you need.
A yummy vegetarian dish my MIL made for us one night. My hubby enjoyed this immensely and asked for the recipe. She got it from The Outer Banks the Bountiful cookbook. The recipe claims to be enough for 6 side servings, but my MIL says that it is enough for 2 to share for a main meal. She also says that she has not had any success doubling this recipe.
I found this in an old cookbook lent to me by a friend. It seemed like an easy comfort food recipe that could be prepared from ingredients that I usually have on hand, and wouldn't take a lot of effort on a tired night. Similar to ground beef stroganoff with spinach and bacon stirred in, my hubby loved it.
