    This recipe was given to me whilst I was on an allergy elimination diet. It has no gluten, dairy or eggs. A basic recipe, but not bad when your diet is restricted. The best rice flour to use is a very fine textured flour-you can buy it at most asian grocers. The coarser textured rice flour will taste gritty in your baked goods. It's been a while since I made these-so I'm guessing that they serve 4. These are also vegetarian. As all gluten-free flours are a little different in how much liquids they absorb-add some extra liquid if required to achieve the right consistency

    This will make quite a good all-purpose/general purpose gluten-free flour blend. The addition of the bean flour will increase the protein content of the flour. Any bean flour can be used- such as besan, chickpea, lentil or soy flour. The flour will not be white, as the bean flours are generally a lightly golden colour. Store for ready use in your recipes and add xanthan gum, guar gum or baking powder as required. This recipe is from the Australian Celiac Society's Handbook. The general recommended amounts of xanthan gum are 1/2 to 1 teaspoon for a cake, 1 teaspoon for a pastry recipe and 1 tablespoon for a bread recipe. Add the gum to your dry ingredients and mix well, prior to adding liquids.

    Good old-fashioned baked apples. A great winter dessert and also gluten free. This recipe makes 6 baked apples. You can substitute different fruit and nut combinations, eg sultanas and sliced almonds. These are extremely hot when removed from the oven I usually allow them to sit for about 10 minutes. Any extra apples can be stored in the fridge and reheated in the microwave.
