    Poached Chicken PLUS

    These are recipes using cooked chicken, and my favorite way to have chicken ready to go is Poached Chicken Breast #101403. I make large batches and freeze the breast halves individually wrapped.

    This is NOT "authentic" or "Greek", but a really tasty QUICK and hearty soup for lunch. I THINK it may have been in a very early edition of Quick Cooking. The chicken is optional, but if you happen to have leftovers, adds to satisfaction.

    This comes from the Peking House restaurant in Green Bay, Wisconsin. Easily adaptable to what you have on hand, including any meat you like, or use tofu. The cook times are approximate since none were given. It cooks fast, though, if you are using all leftover rice, eggs, and meat, which this recipe assumes. If you have to cook the meat, scramble eggs, etc. then it will take longer. It's best to use leftover rice.

    This is one of my favorite dishes that I grew up eating. Even though I am grown and married and live far from mom, I still request this dish every time I go home. This is a very easy dish to change to suit your tastes -- use cream of mushroom or cream of celery -- whatever you have on hand.
