    A nice hearty recipe. Freezes well. Sometimes I add a little minced garlic. It tastes good and is a nice soup for colds and flu and easy to prepare. I usually use chicken already prepared from the freezer and you can substitute dried carrots, onions and celery for fresh veg.

    I came across this in Taste of Home's Quick Cooking. Was unsure about it, but took a chance and love it. The corn chips gives it a crunch and the lettuce and tomatoe add a cool crispiness that add to the warm creaminess of the rice and chicken. It is extreamly wonderful.     I love this soup. Very rich and creamy. I serve it with biscuits and honey. My kids even like the leftovers for breakfast the next morning. I actually like to add the chicken and vegetables first before the noodles and cook for an hour or so, then add the cream mix and noodles and simmer on the back of the stove for a couple of hours. I love having the smell of the soup cooking all day.

I had a lot of leftover veggies and some frozen cooked chicken and I came up with this. If you like a soup with lots of noodles and a lot of chicken, this might be what you are hunting for.
