    Adapted from a recipe by Joanne Wier, this is an astonishingly wonderful change-of-pace for the pizza heads among us. Rich, but with a distinctly Greek "flava" this beautiful dish will make your evening. Wonderful to serve to company - very pretty, unusual, and TASTY! ADDENDUM: I've tried several great variations on this...using puff pastry instead of phyllo, substituting cream cheese for the mozzarella, adding some cilantro pesto to the cheese combo, and topping with sauteed onions, zucchini, yellow squash, and using chopped GREEN olives instead of black. Scrumptious! Use your imagination and run amok!

    This IS AMAZING! My own personal recipe:) The massive amounts of veggies stay moist and absorb every ounce of garlic pesto flavor, the crust is crisp...the pizza is quick, easy, satisfying, flavorful and healthy! Piled high with veggies and other good stuff, this puppy will satisfy even the most skeptical pizza gourmet. Try adding garlic grilled chicken for a carnivorous twist. ROWR!

    This is a great recipe for a different kind of pizza. It's heavy on the flavors, but you don't feel stuffed after eating it.     My Great grandmother worked at the original Valentino's Pizza Place in Lincoln, Ne. She was nearly 80 and her job was to put the sauce on the pizza. Today, it is a chain of restaurants, buffet style. I still remember what it was like to be in the back of that busy kitchen!

    I found this recipe today among some newspaper cuttings. I've not tried it yet but it sure sounds yummy - and flexible. You could vary the topping ingredients with whatever takes your fancy or have on-hand, for example, pesto, fresh tomato sauce, capers, pine-nuts, anchovies, artichokes, smoked chicken, Italian sausage, ham, bacon, pepperoni, jalapenos, pineapple......the list is endless. We had this on our honeymoon in Provence, where they served it with a bottled of herb-infused olive oil! Delish!
