Pizza, Casseroles, and Other One-Dish Meals

Casseroles used to be pretty much all we ate until I quit my job to be a full-time stay-at-home mom. Now it doesn't happen nearly as often, especially in summer, but as far as generally easy, warm, and comforting foods go, you just can't beat a good casserole.

What an interesting change from tradtional manicotti! You'll love the creamy texture of the cheese sauce! Note: if you slightly undercook the manicotti they will be easier to stuff.

Good comfort food and easy to make.

    Recipe #34943

My mom came to cook and clean for a few days after our first daughter was born and saw this recipe in my Quick Cooking magazine. My husband and I were both skeptical when we heard the ingredients, but fell in love at first bite! I've made it about once a month since then. It's incredibly quick and easy. I usually do 1 cup white rice and 1/3 cup partially cooked wild rice, but it's delicious either way. I always use Campbell's Chicken with White and Wild Rice Soup instead of the regular Chicken and Rice, but there again, either works. The Wild Rice soup has some veggies in it that add some nice colour, though.

This can be made the night before, refrigerated and cooked the next day.Quick, easy and delicious. Serve with hot biscuits. You can use precooked bacon pieces or turkey bacon or small pieces of ham! NOTE: i HAVE CHANGED THE AMOUNT OF MAYO (IT WAS A MISTAKE WHEN I FIRST PUBLISHED)

This creamy casserole dish is a great way to use up leftover salmon. For a healthier variation I like to use whole wheat noodles and substitute all or 1/2 the sourcream for plain non-fat yogurt.

This is a meaty spanish rice with lots of flavor. I never really liked most Spanish rice dishes because they seemed too bland until I ate a version of this one at a family reunion. I tweaked it so that it had lots of taste without the green peppers some people use because I have a son who hates them. If you like them feel free to add them to the dish.

I made this up one evening...now we've had it several times for a quick dinner...just add a salad.

The pork mixture can be made a day in advance and refrigerated. Cooking time does not include cooking pork. You can also make this with ground beef. This is spicy, if you want to reduce the heat, then omit the jalapeño or Tabasco sauce. This is a really tasty dish, and the cornmeal topping just by itself is good baked in an 8x8-inch buttered baking dish, I baked mine for about 25 minutes at 350 degrees!

    A nice simple supper.

This is a meal like my mother made. Neither the American Heart Association or Weight Watchers International would approve of this, but it's really good eat'n!

This is a very delicious seafood quiche, I have made this quite often for a luncheons, everyone just loves it. This recipe make 2, 8-inch pies, just divide all ingredients evenly between the two pie shells. If my memory serves me right, I believe the original recipe called for one large deep-dish, 10-inch pie plate, but I prefer to make it into two, 8-inch pies.

This is from my mother's Betty Crocker Recipe Card Library from the 70's. I've been enjoying it for 3 decades! It's so delicious, and not as hard as the recipe is lengthy. It makes even a novice cook look pretty darn impressive!

"Hey Lacey You are bringing the salad right?" And everyone knows it is my tuna macaroni salad. Its been a hit for years with the young and old alike, summer or winter, serve it cold or hot, (omit the cuke if you like, when hot).

Loved this recipe I found in "Quick Cooking". I reduced the amount of olive oil in the original recipe, and this turned out to be quick weeknight meal for the family. I served this with broccoli and bread.
