Pizza, Casseroles, and Other One-Dish Meals

Casseroles used to be pretty much all we ate until I quit my job to be a full-time stay-at-home mom. Now it doesn't happen nearly as often, especially in summer, but as far as generally easy, warm, and comforting foods go, you just can't beat a good casserole.

You can use 1/4 teaspoon chili powder instead of cumin if you like, but I love the cumin. If you prefer your bell peppers more crunchy, add them the last 15 minutes of cooking.

    Recipe #177587

Delicious anytime, but perfect on a cold winter's night. One of our family favourites from the 1986 Manitoba Milk calendar.

    Recipe #176278

Saving this here for future use! Sound quick and easy. Could add other ingredients, as desired, to suit your taste!

    Recipe #177539

This is a really different pizza, not what you would normally expect. Great as a light supper but even better as an appetizer.

    Recipe #177569

My friend's great recipe that has solved the quick "dinner dilema" more than once! Thanks Mel! (OAMC instructions included)

    Recipe #80086

I wanted to make something tasty last night, but since we're both going out of town next week, I haven't been grocery shopping. This is what I made with what I had in the freezer and it was yummy!!

    Recipe #158416

This is a great recipe after Thanksgiving when you have an abundance of leftover chicken or turkey!

Quick, easy pizzas that kids love. From Betty Crocker's Grill It.

    Recipe #177531

This is my new favourite pizza! I will often make a double batch of the chicken/BBQ sauce mixture and freeze it. I usually caramelize the onions by frying them until soft with 1 Tbsp of butter and 1 Tbsp of brown sugar. This makes the pizza very sweet but I like it that way;)

    Recipe #98044

This is my favorite homemade pizza; these are the basic toppings though I vary sometimes depending on what's on hand. I make the dough in my bread machine and add a little garlic powder and basil or italian seasonings to the dough ingredients for extra flavor. Some measurements are approximate.

    Recipe #97918

This used to be the traditional Mennonite Sunday lunch at our house -- it has since become more likely at supper, but it's just as traditional and just as delicious! I'm not sure where farmer sausage is all available or whether it's one of those local specialties just available in Manitoba, so I've posted a recipe for that as well for those of you who make your own sausages. (#184513) If you can't buy it nearby or make it yourself, I'm terribly sorry -- you're definitely missing out! This recipe is for those of you who can.

Stick to your ribs cooking, Cajun-style.

    Recipe #44631

This recipe is great for that leftover ham that you have after all the holidays. Makes a little change from the ham salads and ham sandwiches. Give it a try.

    Recipe #114154

Adapted from Company's Coming Pasta cookbook. One of our favourites, it can be hot, hot, HOT, or just toasty warm, depending on the amount of spice you want to use. Since my daughters were born, I've actually completely omitted the red pepper and it's still delicious. You can also adjust the servings by the amount of pasta you use. Another thing you may want to adjust is the amount of sauce. This dish isn't particularly moist, so I often add extra oyster sauce and/or plum sauce at the table. Then just add egg rolls and Japanese Coleslaw or a sweet salad and you've got a perfect meal for entertaining that's simple and quick enough for anytime.

    Recipe #176201

This recipe is from my mom, who got it from my aunt. My aunt and I have unlimited access to pork because our husbands are both hog farmers and this is a great way to use up leftover ham. It's also a relatively quick meal to prepare.

Super easy, great tasting meal, made in your crock pot, perfect consistency. You can even plan for it to be done when you want by using high or low heat.

    Recipe #125385

I used to be all about quick and easy cuisine, but since becoming a stay-at-home mom, I've branched out a little, now that I have more time. However, this recipe still gets made pretty often. The original recipe says to simmer all together in a large skillet for 45-50 minutes, but I prefer to bake it rather.
