This sounded like a really interesting salad and I usually enjoy red cabbage salads. I found this in the Christmas 2008 copy of BBC Good Food Magazine and I wanted to put it here for safe keeping.

    Recipe #340030

This comes from 1001 Low Fat Vegetarian Recipes. This would be wonderful for a take to work lunch. Posting for ZWT3. Someone please take a photo of this!!

    Recipe #231400

Very simple, healthy and delicious meal. If you like quinoa, you'll love this. I've brought it to many potlucks; it always gets positive remarks. I sometimes leave out the red onion for those you don't like uncooked onions. Be creative with this recipe. You can add or subtract any veggies.

    Recipe #159400

My vegetarian version of the delicious, squished sandwich. :) Prep time includes chilling.

    Recipe #114773

Sweet oil and vinegar based salad. Quick and pretty!

    Recipe #287301

I developed this recipe through trial and error and have come up with what I believe to be one of my best unique creations. No weird ingredients, just yummy goodness. The salad is really nice as a side dish for burgers or as a light main course. Enjoy!

    Recipe #310636

I love hearts of palm so I made up a salad. Hearts of Palm are usually packed in salted water so this recipe is for ones packed in salted water.

This is great as a dip for a party or just on some bread as a quick lunch. A bit more adventurous than the standard hummus. For the smoked paprika you can use either hot or mild, your choice. For the olives I like to use a mix of green and black. Use the best quality extra virgin olive oil you can afford - it really shines in this recipe. I use garlic powder in this recipe because when I make it with fresh garlic no one can get near me for the next 12 hours. If you want to use fresh garlic, just substitute 2 cloves of fresh garlic, chopped, for the garlic powder, and get ready for some seriously delicious garlic breath!

    Recipe #285191

From Vegnaomicon: The Ultimate Vegan Cookbook. This flavorful, rich red dip can be used as a sandwich spread, or as a dip with crunchy wheat crackers or pitas. Especially nice with slices of raw bell pepper or carrots! Please use sundried tomatoes that have not been packed in oil. Fresh basil leaves or roasted garlic can be added as well for a nice variation

I got this from the Food Network, courtesy Tori Ritchie. Yum!

    Recipe #117109

Terrific with anything grilled, this slaw is easy to prepare, as well as delicious and beautiful. It's great for summer barbecues.

Based on a recipe from Bon Appetit--I added the herbs I've been growing. Nice side dish for a hot summer day.

    Recipe #67115

This is a delicious and refreshing summer salad. This can be made with canned corn also (I have done this in the off season) with tasty results! Adjust oil and vinegar mixture to your tastes.

    Recipe #162675

One of the great pleasures of summer is the abundance of fresh vegetables. I had some leftover grilled corn and a few other fresh ingredients lying around, so I made this salad. I prefer the simple sweetness of the fresh vegetables in here, and raw onions don't sit well with my husband, but I bet a little onion and garlic would be great in this salad, so I added them as optional ingredients. I bet this would also be good topped with a little crumbled bacon or feta cheese.

    Recipe #68334

3 of the greatest flavors in nature, together in one dish (Spend a few extra dollars on good olive oil, and you'll see what I mean). Can be served cold or room temperature. Great for picnics.

    Recipe #10757

A fun way to get kids eating a whole bunch of vegetables, without much cleaning up! I learned this recipe while I was eating mostly raw, but I wouldn't recommend this for children, so add in some of the optional extras.

This is from a Chamber of Commerce cranberry cookbook put out by the local women of the Westport-Grayland area of the Washington coast, where cranberries are grown.

A very refreshing salad that I saw on a TV show and I already made twice! Posted for WZT III.

    Recipe #229459

My boyfriend and I were brainstorming what would make a great summer salad and the idea for a cilantro pesto with all green vegetables came to mind. It was a joint effort coming up with the concept. It's fun and yummy too. I am lactose intolerant so I omitted the cheese, but that would increase the flavor for sure if added. Also substituting any pasta, grain, or rice would be great too. The sauce too can be interchangeable with all types of sandwiches, pizza, etc.
