    This is a simple recipe with a spicy kick for garlic lovers. Orzo cooked in broth doesn't need draining, the flavor gets cooked into the orzo and the starch thickens it into it's own sauce. Pop the spinach in the microwave to thaw and chop chicken while waiting for broth to boil. Drain spinach and chop parsley while chicken is cooking. Easy to get on the table in under 30 minutes. Use feta in place of parmesan, add a few chopped olives & juice of one lemon to give it a Greek flair. We like it heavy on the garlic & red pepper, but can be done to your tastes. First time I made it, I thought I went too heavy and it was rather bland. If you like bolder flavors, start on the higher side of the garlic & red pepper.

    Creamy homemade alfredo sauce, fresh cheese ravioli and a luscious pumpkin-sage sauce combine for this quick and easy meal! Great served with a crisp green salad and a crusty baguette, -or- may be served as a starter. Notes: This dish from the Mantua region of Northern Italy is traditionally eaten on Christmas Eve. You can add a bit of fruit chutney, and sub pistachios for the pine nuts. Enjoy!

    Adapted from a 2006 issue of BBC Good Food - you may wish to serve this with a dollop of tomato pasta sauce like I do. If you think it may be to cloying just reduce the amount of mascarpone cheese or serve ir as a side.

    From Ricardo. I made it today. Since I had half a large onion to use, I decided to use it in this recipe instead of the green onion. I added the onion at the same time as the mushrooms. I cooked the orzo in boiling water 10 minutes. It was al dente. We loved this side dish. It was perfect with the chicken that was cooked on the barbecue.

    A great option for vegetarian lasagna. You will greatly enjoy the mix of vegetables in this dish! *Note: pasta sauce can be a white or red but I have found that if I'm freezing it, that the red works out best for me...none the less, I believe the original recipe does call for a white sauce. As a young bride, I made this macaroni and cheese dish from a requested recipe from Bon Appetit magazine. Sadly, if I saved the recipe, it was lost along the years of moving.
