Posted for ZWT6: Middle East. Adapted from Bon Appetit. I can't wait to try this! Ras el hanout can be homemade using spices you probably already have on hand, I use Recipe #262189. Note: The sauce can be made 2 hours ahead of time. If you do this, let it stand at room temp until ready to make the rest of the recipe. Prep time does not include 30 minutes of soaking dried apricots.
Thanks to Martha Stewart for the inspiration in this dish. I used large yams and liked the ratio of more yams than pears or it would have been overly sweet. If you like spice add more cayenne and/or black pepper!
This is a wonderful cake that doesn't even require frosting. Would be fine served with coffee in the mornings or add a scoop of vanilla ice cream for a wonderful after dinner dessert. This recipe was originally made with pears.
