Zucchini, summer squash, and carrots are combined with Kalamata olives, basil, and plenty of lemon to make a delightful summery pasta. If you've got a garden full of zucchini, use twice as much and simply omit the summer squash. Then you can call the dish "Penne Duecolore." A crisp, quintessentially summer white wine, such as a fendant from Switzerland or an Orvieto or Soave from Italy, will accentuate the fresh basil and vegetables.

Courtesy Of Ms. Jane Brody and her Good Food Cookbook printed in 1985. We loved this stuff, and I made it a lot on weekends, especially in the summer when vegetables were cheap and abundant, before that Kiddo came along. I'd usually make more pasta, since I was going through all the work anyway, and more of the vegetables we liked the best. It would usually last us for about 3 meals. It is very time consuming, but, really worth it when you're finished. And like any recipe, feel free to add any other vegetable or seasoning you like.

This recipe is from Carpungnino, a small Italian town where there is a statue of a cat holding an umbrella. This pays tribute to the Ombrellai, or umbrella makers of this town. This makes for a tasty meal with some bruschetta.

I like this mac and cheese because the sauce is smooth, gooey and delicious--and it doesn't curdle while baking like some recipes. Make sure you use a big enough pan for baking, otherwise the sauce will ooze onto the floor of your oven! The mozzarella cheese is the key to this recipe--don't leave it out. You can use the noodles from 2 7-ounce boxes of regular macaroni and cheese mix for this recipe, just discard the cheese packets (or try mixing them in).

Ok, you've got 20 minutes to get dinner on the table, and the table is piled with books, papers, afterschool snack wrappers and a tennis shoe with a broken lace. You're desperate, but dinner can still be delicious, and yes, you can get it done fast! So, you walk into your pantry, grab a few items, and pat yourself on the back for making those wise purchases. Dinner will be a snap! Call The Kids and/or The Spouse (most of the junk on the table is theirs, anyway, right? YOU wouldn't pile stuff on there.) and issue The Ultimatum: "The dining table will be cleared and set in 20 minutes or no dinner tonight." And mean it. Trust me, it works, but they have to know you mean it.

This is one of President Regan's favorite dishes, presented by Nancy Reagan.

This is a classic favorite of all of the Luby's Cafeteria customers. From the Luby's 50th Anniversary Recipe Collection Cookbook. The taste of this M&C might be a little bland, but you can always kick it up.

This recipe is incredibly easy to prepare, rich and delicious! I only make this once in a while because it's a little high in fat and calories, but well worth it. :) I made this recipe using Provolone cheese with the intention of creating a more upscale tasting alfredo. You can serve this over fettucine, or I like to make this recipe with penne and mix it in with the sauce just before serving. A little piece of trivia for you: Alfredo sauce was invented in Rome in the 1920s by restaurant owner Alfrsdo diLello.

Mom's recipe. I enjoyed it as a kid, still enjoying as an even bigger kid! I got my friend and her family hooked too! *The kind of Macaroni and Cheese Dinner to be used here is the one in the short fat box with the foil envelope containing the squishy cheese.

My mother-in-law came up with this recipe and I had to learn to make it because my husband LOVES it. She always makes it for potluck dinners because kids love it. We always add a little sugar to the sauce, but that's optional.
