I came up with this one night while my DH was out of town. You can add fresh basil along with the spinach.

If you watch Top Chef, you know who Mike Isabella is. He almost won Top Chef All-Stars recently, and he featured this recipe. The judges were over the top about it, and apparently he got a lot of requests for it. This was from Twitter, with no measurements specified. Then, I found the recipe posted at allthosethingsiloveblogspot and was ecstatic! According to Ron this was published in the "Newark Star-Ledger: This is it: The sauce chef Mike Isabella made for his “Top Chef All-Stars” main-course finale. It was praised to the skies by judge Gail Simmons. It will be on the menu at Isabella’s new restaurant, Graffiato. Because it is boldly flavored, a little sauce goes a long way. The chef recommends serving it alongside roasted or grilled chicken." He served it on a braised pork shoulder. MAKE AHEAD: The sauce can be refrigerated for up to 3 days, or frozen for up to 3 months.

From Biba Caggiano. Use imported Italian plum tomatoes if you can find them.

From Cooking Light, this is an amazingly flavorful pasta dish. Only 1/2 lb. ground beef and a lot of healthy veggies. Definitely a great meal for a cool night!

My own recipe that I developed while living in Italy. The closest thing you are gonna get to a true Italian Bolognese sauce. And darn right tastey! Oh, and there are some cheats that can cut your prep time to under 10 minutes! - Use tomato sauce instead of fresh tomatoes cut about 10 minutes on the prep time. Don't add salt if you do! - You can use REAL bacon bits to get the same taste! That will cut another 10 minute from your prep time

This pizza sauce recipe came from a recipe in the Pasadena Weekly entitled Mock DiFara's Pizza Pie.

This is a recipe I thought of when I wanted pasta, but had no sauce on hand. I serve it with Spinach Fettucine pasta noodles. The sauce does not look like it will make lot, but trust me it is thick and rich and goes along way.

Meatballs with tomato pesto tagliatelle is a delicious and filling pasta dish. The meatballs are super tasty with garlic and basil, while the pasta has a flavoursome tomato pesto sauce. A little taste of Italy - fantastico!

This a terrific recipe with no added sugar because tomatoes contain sufficient sugar to make it naturally sweet. We'll put this on pasta not pancakes! It comes from the Sicilian Culture website. Try it and you will see. I also sub 1 lb cooked chicken (if using cooked chicken, cook sauce for complete time and add chicken just prior to serving), or 1 lb Italian hot sausage for the ground beef.

I love slowly-roasted tomato sauce, and here's an excellent recipe! You'll have trouble getting your family to wait until it's on the table. :)

    Recipe #28709

Includes beef, wine and parmesan. I can't believe it wasn't already amongst the almost-300 shells recipes on here - it was on a box of shell noodles sometime back in the 80's.. seriously delicious..

A speciality of Amatrice, near Rome, this tomato based sauceis spiked with chili and garlic and richly flavored with bacon and roast peppers. If you do not have time to roast the peppers yourself, use ones from a jar, drained.

    Recipe #407756

This is a wonderful meat sauce that is phenomenal! Everyone who has ever tried my sauce, says it's the best they've ever had. Have it be a special occasion, or an ordinary family meal; the combination of sweet & spice, with a hint of red wine and Italian herbs/sausage, will leave your audience's taste buds satisfied to every extent of the word - GUARANTEED! Be prepared though, as everyone who comes by this sauce will be asking you for the recipe ASAP...Enjoy =) ***Remember: High quality Italian sausage (or meat), and wine/beer definitely make for the best sauce possible.
