Cauliflower makes a great substitute for potato for low carb. This recipe is adapted from Paula Deen's potato salad recipe, and tastes best after being chilled for a few hours.

    Recipe #118995

Italian Country Salad from the Trentino-Alto Adige Region - compliments of the great Lidia Bastianich. At times I have also added string beans or peas (1 cup) to this salad (add to boiling water for a few minutes after the potatoes)

This is a recipe that I got from a mother from my son's preschool. It's very good, crunchy, and fresh-tasting. My kids like this one, too, which shocked me...

From This salad is lovely and can be made ahead. Add or subtract the chipotles to fit your own taste. I have also replaced the cilantro with Italian parsley when served to someone who hates cilantro and it turned out well.

    Recipe #231965

This is an appetizer on the menu of a restaurant here in St. Louis called Aya Sofia. It's a cold bean salad, a traditional mediterranean dish. I loved it so much that I re-created it at home. The measurements are approximate, so adjust to your own taste. Time includes refrigeration.

This is from This is a great salad to take for lunch. Sometimes (if I have it left over), I add a little grilled chicken. I also usually use barilla PLUS pasta. :) Use your favorite salsa. I like ones with a lot of cilantro and garlic! Cook time is the time to chill.

    Recipe #407030

This is a quick, easy, and refreshing dinner that I think is pretty healthy (contains veggies and fiber and can be made pretty low in fat). Although I did get the original recipe from the Moosewood Low Fat Favorites cookbook, I have altered this recipe through the years to meet our tastes. The best thing about this recipe is it can be altered to use whatever crisp veggies you have on hand and whatever spices you prefer. This recipe is also great as a leftover so do not be afraid to make ahead and store in your fridge.

This is heaven, being able to sit down and eat a whole bowl of bruschetta! It is pasta though so there isn't the browned factor unless you put it in a casserole and broil it for a minute. It is awesome served with blackened chicken or garlic shrimp as well.

    Recipe #162895

This is a mild salsa that you can heat up with how ever many peppers you wish to add. The cabbage absorbes the flavors of all the other ingredients. This is a great party food. Cook time is the chilling time.

    Recipe #37237

From my collection of handwritten recipes.

    Recipe #402001

From the 12 Best Foods Cookbook by Dana Jacobi, with a few tweaks from me. Cook time does not include marinating time.

This recipe is simple, delicious, and full of bright flavors. Best of all it contains no mayo, so it is perfect for all day picnics! UPDATE: Thanks to magpie diner for pointing out that the potato proportions were way off. I've updated to point out that this recipe is for 5 lbs of potatoes. Thanks and enjoy!

    Recipe #379908

I saw this made on a TV show and loved it! Can't take credit for the recipe but I swear it's fantastic!

    Recipe #261047

I serve this salad with my Spicy Sour Crean Chicken Enchiladas. It has a wonderful flavor can be made a day early.

    Recipe #381395

This recipe is extra special with vegetables from the garden.

    Recipe #380669

Marinated Zucchini belong to Italian's antipasti. They are great served with a choice of the following: olives, fresh or sun-dried tomatoes, mozzarella, parmesan or other Italian cheese, parma ham and of course crusty bread. They need to be marinated for at least 2 hours.

    Recipe #176716

Try this for your Fourth of July picnic.

    Recipe #176042

A recipe from Chatelaine Food Express Quickies 2. If you love green olives as much as my family, you'll love this quick to make dish.

One of my favorite Naked Chef recipes. I make this often. I just love the trip of boiling up the garlic cloves with the pasta, and then just squeezing them out of their skins and adding them mashed to the dressing.
