    This is pretty much how lasagna gets made in Australia, usually no cottage cheese or ricotta. I have been making it this way for over 30 years, but can't find a similar recipe on here yet. I find it easier to make the beef sauce the day before, and reheat it a little, but I like to use the cheese sauce hot and freshly made. This mix fills a tray 12x8x3 for me, and I find it easier to cut through the top layer with kitchen scissors before taking to it with a knife to cut into serving portions.

    This is so quick and easy and makes the most delicious light supper you'll ever eat! Please try it, it really is stunning! I've adapted this recipe from Australia's "Better Homes and Gardens" magazine, but it is a traditional Italian way of serving spaghetti. The quantities given serve 2, but just double them to serve 4.

    I can't remember who puts out that famous red & white checkered cookbook, but this mac & cheese recipe is theirs. This is what my mom made us since we were kids and any mac & cheese that doesn't contain sauteed onions and real cheese is crapola, in my opinion. And although I have a fondness for the traditional elbows, a rotini pasta grabs the sauce much better. Remember NEVER to add oil or butter to the water you boil the pasta in or the sauce will not cling as well. This goes for all pasta. If you love your children you will NEVER feed them any mac & cheese from a box or made with Velveeta, no matter how easy it is to whip up. Show you care, cube some real cheddar and make a white sauce. Use a good pasta, too. I prefer Barilla, but Ronzoni is a close second.

    This is a typical kid friendly comfort food meal. My own variation of a recipe from a good friend. It is a simple meal to make and great for a cold winter day dinner.     My kids will give up a steak dinner for this spaghetti. It is a recipe I have been perfecting for years and it is so good (if I may humbly say) that my kids are disappointed when they eat spaghetti anywhere else but home! Chef Note: After I posted this recipe I remembered a funny incident--my dear husband usually has a nice bottle of wine handy so when I make a batch of spaghetti I just help myself to a splash of it. On one occasion, there wasn't a bottle opened, but there was a bottle sitting on the counter so I got out the corkscrew and helped myself. For some reason, the spaghetti that night was the best ever. My husband asked what wine I put in it and I showed him the bottle. He nearly fell off the chair. I had opened a rather expensive bottle he had bought to give his boss. Goes to show you--don't use a wine for cooking you wouldn't drink. You get the best results from a good wine!

    I've been making this since my boys could eat solids! and it's still a favourite. Add carrot, celary, bell pepper if you wish, or tinned tomatoes in place of all or some of the soup. I really just make it with what I have or need to use. I also love the custard on mashed potatoes or pumpkin baked in the oven.
