    From the book "Pasta Presto." You can use spaghetti, linguni, penne, rotini...really any pasta you like. You can also use any veggies you like. I tend not to use mushrooms as one of my kids don't like them and I always like adding a leafy green like spinach, kale, swiss chard, arugula or escarole. Written for American audiences at a time when pancetta was virtually unavailable, it calls for bacon instead. Actually both are delicious -- just different -- so I'd try it with each and make up your own mind. Not the healthiest thing to eat, but some good as an occasional treat!

    I used to love the boxed side dish "Noodle Roni Parmesano." I hadn't seen it in store shelves for quite some time, so I played around until I came up with something close to it. As it is just me and my DS at home these days, I intentionally developed the recipe as a side dish for two (or a main course for one!) Although I haven't tried it, I would imagine the recipe would double easily enough.

    Tortellini Michelangelo is a rich, creamy, and filling dish. Legend has it that Michelangelo conveyed his love for this dish through letters. I have seen this made sometimes with added chicken & prosciutto -sometimes just with mushrooms & peas... there are many varieties out there... some with meat tortellini, some with just cheese tortellini, and some use tri-color tortellini.
