This has a nice Middle Eastern flavor and is very simple to make and just requires a few hours to marinate to blend the flavors. Goes great as a side dish or stuffed into halves of warmed pita bread.

    Recipe #88437

A great Singapore style noodle my brother sent me. Very easy and impresses my roommates without digging a hole in my budget. It's versatile as well. You can substitute chicken with tofu, shrimp (another favorite), beef, imitation crab, canned tuna, etc. Plus, it's much healthier than cream-based pasta. Enjoy!

This is a great summer pasta salad and it has only 8 points for 2 cups. Makes a great leftover lunch dish also. Cooking time does not include chill time.

    Recipe #249489

From her cookbook Barefoot Contessa at Home

    Recipe #206715

Take advantage of your garden and the hot summer sun - let them make dinner. ;-) The extended cook time is really the time it takes Old Sol to _cook_ the sauce. You can be weeding the aforementioned garden while this happens; or taking a nap. I know what I'll choose.

A friend of mine got this from a magazine and shared it with me to keep me from drooling over her lunch. (We didn't have leftovers for me to take to lunch, though!) If you make the pesto the night before, this is ready in the time it takes to cook the pasta. It's dinner QUICK!

This bacon flavored pasta is smashing with the addition of arugula.Roasting the tomatoes enhances the texture and taste of the tomatoes. This is adapted from the restaurant "Aperto" in San Francisco.

My daughter's personal favorite! Roasted garlic flavors the veggies and the sauce. Most of the work is done in the oven and it reheats great!

    Recipe #191506

Inspired by another macaroni salad and some nudging from my sister, this is what I came up with. :)* The cook time on this is boiling the macaroni and frying up the bacon, which I did simultaneously ;)

A quick pasta dish, but still elegant

    Recipe #17230

I got this recipe from my mother-in-law. It is a rich and delicious pasta dish.

    Recipe #253865

This is named after a dear student of mine who was originally from Cambodia. We had lunch in a Cambodian restaurant once and this is my "NO AUTHENTIC INGREDIENTS" copy of the recipe. At the time, fish sauce and such were not readily available even in California, so I faked it, but it turned out really well. My Cambodian and Vietnamese friends approve. It's a fast easy weeknight dish and is very open to whatever veggies you have in the fridge. (I love shredded carrots, cucumber, zucchini, halved cherry tomatoes....) What's best about it is that when I cook it I remember this troubled kid who finally made it :)

This is the quickest summer dinner we all love. The possibilities are endless as far as playing with it. I've added, at various times, roasted red peppers, capers, peas and toasted pignoli for some crunch. I first had this at a little deli in Los Gatos that has long since closed, but found something similar on Epicurious and adapted it a bit. This is a life saver when you're tired!

I received this recipe from Philocrates. I'm posting it here so I can save it in one of my cookbooks. Thanks Philocrates.

    Recipe #198960

Another fabulous little pasta from the famous restaurant of Sirio Maccione. This is all about fresh quality ingredients, and is ridiculously simple to make.

    Recipe #159617

This is my hubby's specialty! This is one of the things he loves to cook and can do well!

    Recipe #121066

"SHAZAM! this shrimp is good!" is what one dinner guest said when I served this at a small dinner party to test this recipe. This is created for a romantic dinner for two. Easy prep that can be done ahead of time and the smell of the flash pan-seared shrimp will drive your dinner companion wild. Created for RSC #7. ETA- I designed this dish to be SIMPLE to make for inexperienced cooks. You could certainly make it much more gourmet by roasting the peppers and using fresh tomatoes and herbs. It won't hurt my feelings.

    Recipe #132000

This is a original recipe by Ri Le from a Restaurant here called Ri-Le Vietnamese Family Restaurant. Prep time includes marinating time.

    Recipe #41608

When they are combined, the pasta picks up the flavor of the squash beautifully. Make sure you cook it long enough for the flavors to meld.
