This is my son's favorite meal. I make it with shrimp for him for his birthday every year. GREAT for company because it is so easy and yet taste wonderful! I cook this in the microwave, but I'm sure you could do it on the stove too. Times are what work in my microwave. Please use your own good judgment on times to use in your microwave. (In my quest to eat healthier, I now make it with light butter, light cream and reduced fat Parmesan cheese. It still tastes wonderful, but there isn't any guilt!) PLEASE NOTE! This is an "authentic" Alfredo sauce recipe! Real Alfredo sauce *only* contains butter, cream, Parmesan cheese and pepper. It will be thin and there is no garlic in it! If you want a thicker sauce or one with garlic like modern restaurants serve, please look elsewhere! Recipe #52892 and Recipe #8596 are two good places to start.

Cooking the meatballs in simmering pasta sauce will not only add so much extra flavor to the sauce the meatballs will be melt-in-your-mouth tender, you may of course oven-bake the meatballs for about 25 minutes, --- don't be afraid to add in more Parmesan cheese and a little more milk, there is no need to measure exactly, this recipe is pretty much foolproof, leftover cooked meatballs make a wonderful pizza topping just slice thinly and freeze until ready to use ----- these also make wonderful juicy burgers shaped into patties-- for more of my tried and true recipes check out my food blog at

Manicotti (the word means "little muffs") is a Southern Italian favorite - tubes of pasta stuffed with cheese and served with a savory tomato sauce. Reciepe came from a 1984 Mcall's Cooking School Cookbook. Recipe makes TWO casseroles (one to cook, one to freeze). Each serves 6.

So you have a rice cooker, a hunger, and five bucks. You need to make it through the weekend. Or maybe you just know that sometimes it doesn't take a lot of money to make something worthy of a restaurant. There are two ways to make this and the first is a direct adaptation from the Wolfgang Puck Rice Cooker Recipe book. Times will get better Young Buck and when they do, check out my Situation Not So Critical Pasta recipe...

Clams cooked in the shell pop open on the grill, just they do when steamed-the bonus for the cook: No big heavy pot is needed. From Bon Appetit July, 2007. The sauce can be done up to 2 hrs. ahead and left at room temperature. Re-warm before using.

These are quite possible the best you can make! I came up with this recipe to satisfy my carnivorous family and incorporate my love for Italian food. These have a ton of meat, but still a nice amount of the traditional ricotta cheese and spinach. These can also be great appetizer, due to the large amount the recipe yields.
