    Party Menu -- Early Summer Appy Party

    Summer means get-togethers large and small. This is the menu for an appetizer buffet that a friend recently hosted. I prepared all of the food for her open-house-style party. There were fresh veggies for the moz dip and fresh fruit skewers for the fruit dip. Blue and yellow corn chips were ladled with the salsas and avocado dip. Wheat Thins were spread with the cheese ring. I also prepared a couple of recipes that aren't posted on Zaar. I will add those later.

    From the Cooking Fresh 2005 issue of The Best of Fine Cooking. It states that this little bite, with its contrasting flavors and textures (smooth, salty prosciutto versus crisp peppery greens) will surely stimulate your appetite. If the prosciutto is very long, cut each piece in half crosswise first. I have subbed a baby green mix for the mesclun or arugula due to availability.

    This recipe was originally submitted by Mean Chef (IHHDRO). I adopted it after he left the site. My comments in my original review stated, "Although I didn't find this recipe here, I have made this salsa for several years. Due to variations of ingredients on hand, I sometimes make changes (and/or additions). However, this is a very good base recipe for fresh salsa. There is no need to change it; but we all like a little variety now and then." I am the designated salsa-maker among my friends, and this recipe never disappoints.
