    Pantry Dinners

    You should have most of the ingredients for these on hand. If you neglected to plan ahead you may be able to make these. And when times get lean you can't always go to the store for produce. You can take gallon zip bags, put in the cans you need, a smaller zip bag with the spices, and an index card with the recipe (just print it off Food.com in index card size). For many recipes you can just open a bunch of cans, cook an onion, and dinner's in the oven!

    A healthy turkey chili recipe. Very easy to make (as long as you have a can opener) and it is easy to keep the ingredients on hand. I use as many 'no-salt-added items as I can find) Whenever ground dark-meat turkey goes on sale I buy a bunch of one pound packages to freeze away. Serve this with crackers or tortilla chips.

    A wonderful accompaniment to any meal! These taste just as great reheated in the microwave for about 20 seconds each. You could substitute pepper jack or Monterey Jack for the cheese. You could also sprinkle a little parmesan cheese on top.

I regularly use a can of white kernel corn (never tried yellow) instead of two cans garbanzo beans but would recommend trying all garbanzo beans first.

    I like to think of this vegetarian dish as Egyptian-style chilli. I was first introduced to it during a trip to Egypt four years ago, where it was nearly all we ate for a week! It's served in "fast food" type restaurants, sold from carts by street vendors and made in the home. There can be many variations, but this is close to the one I grew to love. By the way, this is a great recipe when you need to feed a crowd on the cheap.

    A quick, very easy, low clean up way to make enchiladas. I adapted this from a few other recipes. We prefer flour tortillas but you can use corn. Corn does work better if they are warm, so putting them in the microwave for 30-40 seconds makes them more pliable. It's a drier casserole, so if you like creamy ones, you may want to add more milk. I'm just posting my version. I think you could probably make this with tuna for a yummy variation, also!
