    Pacific Northwest Recipes

I live in the beautiful Pacific Northwest - grew up in Oregon and live in the Puget Sound area these days. We're proud of our cuisine! This cookbook features recipes and ingredients from Washington, Oregon, British Columbia, and Alaska, as well as recipes by chefs and restaurants from the area.

Got friends and camping to go together? Here's the drink for you! Similar to Apple Pie in a Bottle, here's my cobbler version of a drink that's great to take on camping trips with good friends, and perfect for sharing around the campfire. :) This is my own recipe that we take to SCA camping events in the Pacific Northwest.

Here's a drink that's great to take on camping trips with good friends, perfect for sharing around the campfire. This is my own recipe that we take to SCA camping events in the Pacific Northwest (other folks have their "secret" recipes they don't share). You know you have good Apple Pie when you take a sip and you can even taste the crust. :) You don't want to miss out on this one!

This is a favorite of many from Seattle's award winning vegetarian restaurant 'Carmelita's'. From Chef Daniel Braun. I've never timed this, so I'm guessing at prep and cook times.

From Vij's in Vancouver. Adjust the quantity of cayenne in this recipe according to how much "heat" you prefer. As with most spicy casseroles, the flavours of this curry will improve on standing, but add the fresh coriander just before serving. If cumin seeds are unavailable, substitute an additional 1 tsp. (5 mL) ground cumin. This was one of Mean Chefs recipes which I was lucky enough to adopt, have made it as stated and it is delicious!

    Recipe #95373

I received this recipe from a restaurant in Portland, Oregon.

    Recipe #10380

This recipe comes from British Columbia cooking teacher Jane Baily. The steaks are moist with a real Mexican kick. Add green rice, a side salad, make the Margaritas and let the party begin!!!

    Recipe #57297

This wonderful Christmas cake recipe was given to me by my good friend Martha in British Columbia in 1975 after a wonderful Christmas Buffet party at her house. She gave me all the recipes for the whole buffet with a big smile, as she knew I was a happy cook. We shared many wonderful recipes over the 11 years we lived there. The Recipe came from her very English grandmother from Quebec.

Last year I went on a trip to the West Coast and ate sturgeon for the first time. It is incredible! I ate at a restaurant called The Ark on Long Beach peninsula several times, and this was the sturgeon I enjoyed there. This dish is fantastic, and really easy to make. If you don't have sturgeon, I think any firm fleshed white fish would work.

    Recipe #55152

Easy summer salad for a light meal. Serve with toasted garlic french bread and a glass of white zinfandel. Enjoy!

    Recipe #94696

I got this out of the Edmonton Journal. This recipe is soooooo yummy and a welcome change to all the meaty types.

    Recipe #104946

Great one dish meals for seafood lovers.

    Recipe #41543

My sister gave me this recipe from Camp Wi-ne-ma, on the Oregon coast. We spent many a wonderful summer day at Wi-ne-ma, on the beach, in the chapel, or with our camp friends in the dining hall. If I close my eyes I can still hear the sounds of the kids chatting and laughing in the echoing high-ceilinged hall, still smell the delicious odors of our meals. My sister Cathy says, "I remember these from my many summers spent at Camp Winema, while growing up. They were my favorite cookie, and still are to this day. Whenever I bite into one of these cookies, I have many fond memories from those days."

I found this one on the web but I don't remember where. This is no place for watery lager. It calls for a beer or ale with a full robust flavor. I usually use a Brown or Red Ale from ICE HARBOR BREWERY, my favorite local Micro brewery. Fat Tire Ale from The New Belgium Brewery is another good choice. Most Ramen recipes are particularly handy for RV cooking, ie, minimum use of gas, not much heat buildup in the kitchen, and the pantry doesn't weigh much.

    Recipe #93708

My favorite Pub, Ice Harbor Brewing Company, adopted my New Mexico Pulled Pork #91250 to make sandwiches as their "Tuesday Special". They serve them with a southwest sauce. I've been trying to clone that sauce but failed. I did however, in the process, come up with this sauce that I'm rather pleased with. I use it on sandwiches, breakfast burritos, flautas, onion rings, french fries, and all manner of things. www.worldspice.com has fresh un-ground chili powders and top quality Paprika.

    Recipe #104027

This recipe took me several years to perfect and it has been enjoyed by everyone who like clam chowder, even those who did not like it previously. By puree'ing the tomatoes, you would hardly know that tomatoes were used.

    Recipe #37586

This is the drink made by a Seattle bar for Seattle Mariners' Ichiro.
