I adopted two chefs for Spring 2007 "Pick A Chef" (PAC). Chef Recipe Reader and chef SugaredAlmond. Here are the six recipes that I tried for the PAC event. They were all good, and I would recommend all of them.

This tastes of summer... really nice served with a glass (or two) of Red wine and a crisp salad.
You need to use the ripest, juiciest reddest tomatoes you can find, so if only anemic looking Toms are on hand, use a can of chopped tomatoes instead.
Don't be tempted to use chicken breasts instead, as it's the chicken juices that flavour the pasta so well.
Cooking time includes 2 hours marinading
This is so simple to make, but tastes fantastic. You do need to plan to make this in advance though, because of the long marinading time, but it's definitely worth it.
I like to serve these with homemade Tzatziki, pitta and salad.
This is quick and easy using Bisquick and a rotisserie chicken. There's no veggies here, but feel free to add what you like. Also we individually season our portions, according to what we'd like. Try a ground pepper blend, or smoked paprika, or dry chipotle seasoning, or a lemon herb blend.
Finally, I have my MIL's salad dressing recipe. It's one of my husband's favorites. It has whole cloves in it, so either remove them before serving, or be sure to let people know so they don't eat them.
