    I found the basis for this recipe years ago and have revised it over the years. Try this tasty rice with fish or chicken. I prefer to use a good quality long grain rice, especially Jasmine, but any rice will do.

    Made chili one day and realized I didn't have the right tomatoes nor the tomato paste that the recipe called for so substituted with peeled plum tomatoes and Rotel tomatoes. It turned out to be the best chili I ever made. If you like it extra hot, use Rotel Hot tomatoes.

    This recipe is adapted from Fine Cooking magazine. It has a golden crust from the sear, a juicy center, and is topped with a dab of rich flavorful butter. This is very nice served on top of a bed of rice accompanied by sugar snap peas or asparagus. Salmon dishes are common in the US Northwest.

    My mom made this recipe when I was growing up and it's still one of my favorites! Rumor is, it's originally a Weight Watcher's recipe. It's really easy and very good! I haven't found a Chicken Diane recipe like this one yet. Try it and PLEASE tell me what you think! :)
