I have been working on this recipe for a number of years now and it does tend to change now and then. I promise you that any changes I make to it only makes it better. Try it over bean and beef or breakfast burritos, chimichangas or just eat it as a stew with warm tortillas. I make a huge pot of this so I can freeze some for later. Can be transfered to the crock pot for all day simmering on low. Adjust chilies, jalapeños and spices, tasting as you cook. I have never measured before when making this so please let me know if something doesn't work. Take liberties with this recipe to suit your own tastes. I won't mind in the least. It is what I would do if this recipe was posted by you. Pork can be left out for our vegetarian friends.
2/21/13..I am raising 3 young grandsons (1-5) now and find time to be a premium commodity. Being a purist is not affordable at the moment. Try a large can of green enchilada sauce instead of tomatillos if you find yourself short of time and energy.
My DH's aunt made these for us one night while we were visiting them--they are so good and easy! She made up a whole bunch and used the leftovers for quick lunches/suppers later in the week. They are quite filling, especially with the addition of rice. In fact, the bean mixture could be simply served over rice for a Cal-Mex beans & rice meal. Prep/cooking times are estimated. Using reduced fat sour cream and cheese, whole grain white flour tortillas, and no meat, a serving of 1 burrito has 6 points (WW).
This is a typical kid friendly comfort food meal. My own variation of a recipe from a good friend. It is a simple meal to make and great for a cold winter day dinner. If you like cheese as I do, you may add more then indicted below. You may substitute low fat shredded cheese and/or low carb elbows if desired. Serve with a salad and your done!
There are so many cheese ball recipes and so many Mexican dip recipes, but I'd never seen a Mexican cheese ball, so I had to try it. DEEEElish! It's great served with tortilla chips or those extra big Scoops corn chips.
I printed this off Ortega's web-site. The creator was a finalist in their 2002 cooking contest. It is REALLY good and really easy. My additions are a can of hominy (because I love it!) and shredded Monty Jack to top the soup. Great with tortilla chips!
Sensational side dish. It takes a bit of work, but the effect will have your dinner guests talking! A slightly sweet little bundle topped with a smoky chipotle-sour cream sauce. I used a 1/4 cup cookie scoop to measure out the mixture for each tamale and got 16. From Nob Hill Foods website featuring recipes for Thanksgiving. I might try increasing the sugar and decreasing the masa and see if it will still stay together in a "tamale".
These turkey burgers are spicy or mild depending on how hot the chili sauce is that is used. We use New Mexican chili sauce (medium) and Louisanna hot sauce. Recipe adapted from Bon Appetit (August 2004)
This recipe appears by special request. Creamy chicken and green chilies I use the regular sized tortillas.. not the large ones.I overlap the tortillas to make the layer. I make it up in an oblong serving dish, I think it is about a 9 1/2 inch by 11 inch pan. But any size you would put 1 full cake mix into will work well . I love this recipe.
