Straightforward mac n cheese made w/ a white sauce and using plain yogurt in the recipe and reserved cheese topping. I left out salt on this and let ea. person add their own salt and extra pepper at the table. Also, I freshly grate my nutmeg and use NY State Cheddar. This is a starting point for mac and cheese. Some embellish it with tomato, other cheeses, onion, green or sweet red peppers, buttered bread crumbs or cracker topping etc. I adapted it from "Now....Your'e Cooking" website.
With only three ingredients salt, potatoes and extra virgin olive oil, and you are rewarded with a divinely creamy and buttery dish of mashed potatoes. Yukon Gold potatoes have a naturally unique buttery flavor with no butter added! Ordinary salt is one of the ingredients here. Use any salt you like, but (imo) great salt will give even more great flavor! I can't wait to try this with different varieties of salt to discover the differences. I think this recipe leaves lots of room for experimenting with flavored or infused extra virgin olive oil and various salts. Experimenting is half the fun! Let me know what you use please. This recipe is super easy, impressive looking, delicious and relatively healthy! What more could you ask for? I serve this in the summer time and it's a great alternative to a mundane veggie side. It's beautiful and will impress any guests!
The number of zucchini you use greatly depends on the size. Eyeball it. I'm sure you will find something to do with them if there are any extras!
OUTSTANDING! My mother always knew how to season food and she was a great cook! The blend of the vegetables seasoned with chili powder makes this casserole go to the top of the scale!! You can go up or down with the amount of chili powder to suit your own spicy taste. You may like to change the spice to Italian seasoning and try that. I do it both ways.
It does take a little more effort than box macaroni, but it's totally worth it. Besides, it doesn't really take any more time, because you make the sauce while the noodles cook!
The added cottage cheese keeps it creamy and cheesy even with less cheddar, no butter, and less oil. If you want to bake it, sprinkle some buttered bread crumbs on top and bake it in a greased dish at 350F for 30-35 minutes. I'm usually too much in a hurry to want to wait for it to finish baking, so stove top macaroni is king at our house!

Grandma started making this for part of our Thanksgiving and Christmas dinner when I was about 8... Once I was old enough to be in the kitchen cooking, about 9, this was always my dish to prepare....
This is a very easy dish I made by throwing together ingredients I had lying around the house. It can be jazzed up by replacing the cheddar with pepper jack cheese. I also like to boil pickled jalepenos with my potatoes to infuse them with spice. This makes a great side dish or make it a meal by adding ground turkey or chicken.
