    I got this recipe from "Simple Vegetarian Pleasures" by Jeanne Lemlin. I LOVE asparagus and am always on the lookout for new ways to make it. This is such an easy and elegant way to serve it. The asparagus gets a slightly nutty flavor after roasting, which makes it even more yummy.

    A tasty potato dish for those occasions when you just don’t have much time and you are looking for a shortcut. The potatoes are not peeled, there is no onion or garlic to peel and chop, mince or crush and all the herbs are dried. Preparation involves little more than pre-heating the oven, getting your dried herbs out of the cupboard and cutting the potatoes into thin slices. Vary the herbs according to your preferences. This dish is best made just before serving. I was inspired to develop this recipe, the particular combination of herbs, from memories of a similar dish I ate many years ago in a restaurant in Hampstead Heath, in England, so it is, I suppose an English-Australian recipe. It was served with Onion, Apple and Sage Pie. In view of Bekah49036's comment in her review that her potatoes were too salty, do add salt to taste. People's tastes differ SO much! I've adjusted the two salts in the ingredients to now read "to taste". Thanks Bekah49036! :)

    This is an easy, simple recipe that goes over well. You can make the filling ahead and scoop out the tomatoes well ahead of time but do not fill the tomatoes until just before serving. I like to add the lettuce to the filling just before filling the tomato however the original recipe said you can mix it in when you combine all the stuffing ingredients. Looks great on a buffet table

    Found this recipe on the Weight Watchers website. It is a core recipe but can become flex by counting the points. I think these potatoes have a lot of flavor and are a great side dish. Even kids and husbands will enjoy! It's easy too! I also double the ingredients and use 6-8 potatoes to get a good amount out of this.

This is a simple and quick main dish that is recommended to be served with a 7-Layer salad for a full meal. They suggest assembling the salad while the water comes to a boil for the pasta and making the sauce while the pasta cooks. Quick and easy for a weeknight meal.
