    You can add a protein such as cooked chicken, cooked beef, cooked turkey or cooked sausage to the recipe. Its a good way to use up leftovers. Use 2 1/2 cups cooked meat for each recipe of rice.

    I make these often, and always a week or 2 ahead. They may be baked, covered with foil, and frozen. Thaw at room temperature 30 minutes. Bake squares at 350°F for 25 minutes or until thoroughly heated.

    I usually multiply the quantities and make a whole bunch of these tasty "bullets". They freeze well and come in handy when I have no time to cook or unexpected company drops by. They would, shaped a little smaller, make a great finger food at a cocktail party. You could make them ahead and reheat them.

    For freezing this is easy. Cook rice and put in a 4 cup container. Shred cheese and put in 2 cup container. Shred chicken and put in 2 cup container. Thaw, assemble, bake.
