    I discovered this recipe while looking for items to include in my package for the 2006 'Zaar cookie swap. I liked the idea that this could be used with either coffee and tea.

    Fiddling around in the kitchen, I was looking for a protein rich snack prior to working out. This sandwich was the result and seemed worth posting. If you think it sounds strange consider the delicious and popular appetizer of baked brie in puff pastry and dried fruit. This is a deconstructed and reconstructed version for one. My version used reduced fat ingredients, but you can use the full fat versions if you like.

Use this on your favorite popcorn popped in a microwave, on the stove or using popcorn popper.     During a recent trip, I stayed in Fes with the family of a local friend. His mother spoke no English and I spoke no Arabic but our common language was cooking and we spent many hours in the kitchen together. One afternoon, she made this for me and it was just amazing. While cumin is as commonly used in Moroccan homes as salt and pepper in the US, the stellar ingredient in this simple recipe is the use of a good quality olive oil.     This is more a technique than a recipe per se. However, if you love the taste of fried sweet plantains but don't want all the fat, this is the way to go. For those less familiar with plantains, they would best be described as a cooking banana. These pair well with almost and Caribbean entree. For the best results, make sure you have a really ripe plantain one that is all yellow with a good number of brown spots. Though I have portioned this as a half plantain per serving, one could easily eat a whole one alone.

Though keeping some of the chocolate makes this a wee bit of an indulgence, it certainly makes this a better option for low fat folks like me or diabetics.
