Often in life, the simplest things are best. It is certainly true with some dishes. This quick and easy to make chicken is one of those dishes, very satisfying.
My husband loves his comfort food, so I serve this tasty dish with garlic mashed potatoes and fresh green beans.

NOTE: if you have a newer crockpot, i would only cook for about 4 1/2 -5 hours otherwise you will end up with dry chicken and a mushy mess. this does have a great flavor though, just try not to overcook it. :)
I saw the asparagus in the produce section today and decided to come up with a recipe for dinner tonight. This is what I came up with - both DH and myslef loved it. Easy enough for any day, but "fancy" enough for a dinner party.
I served these with fingerling potatoes roasted with olive oil and rosemary.
I found this recipe on Tastefully Simple's website. I'm posting it here to save it. It uses their Onion Onion seasoning but Recipezaar didn't recognize that ingredient so I had to list it as dehydrated onion.
This is such a great weeknight dinner and it tastes amazing!!! The mixture of chicken, fresh tomatoes, broccoli and italian dressing makes for a delicious dinner the whole family will love. You of course can make it with any vegetable on hand-I've even made it without the cheddar cheese and the taste is still great!!
I recently purchased the new Hungry Girl Cookbook and this is one of the recipes that I really want to try. It uses ground Fiber One Cereal to make the "breading." Here is what the book says: " Trust me, these chicken strips will quickly become a staple in your diet. (The serving size is huge, so feel free to save some for later!)."
I like Chicken Cordon Bleu... but not as much as it likes to stick to my stomach, rear, and legs. I've created this healthier version to serve instead, and my family really enjoys it. I hope you do too!
A lightly curried sweet way to cook chicken when you don't want to stand over the stove. I don't remember where I got this from.
I like using breasts but use whatever you like.
I also like skinning the chicken to cut down on the fat.
This is another great Jalapeno Chicken recipe by Weight Watchers. It's out of the 2000 "Day by Day" cookbook. It has 3 points per serving. I have done both blender and fine chopping and they are both great. I find the extra bits and pieces by chopping instead of blending adds a great crunch to the dish and makes it look outstanding.
