    Meatballs that wind up looking like little pokey porcupines! I decided to post our version of these great meatballs since none of the others were "quite" right. UPDATE: I have frozen these with the sauce and uncooked meatballs together, then placed frozen in the crockpot on low for 5-6 hours and it worked great!

    Easy to make, freezes well for OAMC. We made something similar to this at Dream Dinners and have continued to make it ourselves, it was so easy! You may want to pound out very thick breasts so you get more crusty topping per bite!

    We adapted this to make it super easy for OAMC and freezing. The portions are for 2-3 servings each because it fits really well in a gallon ziploc bag. You could double it and it would probably still fit. Freezes very well. Plan to make two sets and you'll use up your packages of ingredients. Updated to add: Works well in crockpot - cook on low 6-8 hours. I'm sure it would work great from frozen as well. Also, I've used plain onion soup mix and the taste is still great.

    This is a quick, healthy meal that isn't time consuming to prepare and easy to clean up! To prevent rice from sticking to the foil, spray foil with cooking spray before using. Or, use nonstick foil. If the chicken breast halves in your market are larger than 4 oz. each, they will take longer to cook. Be sure to cook them long enough so that they are no longer pink in the centers and the juices run clear (170°F).

    I don't know where I go this recipe, but it has a very interesting mix of flavors that come together for great chicken. I usually double the the marinade and set half aside before I marinate the chicken. I cook the marinade I set aside at a low boil until reduced and has a syrupy consistency, stirring often. Baste chicken while it is grilling three or four times. I did not include marinating time in the prep time.
