    This comes from the Dream Dinners cookbook and works very well from the freezer. This has a fairly mild flavor.

    A throw-it-together and pop it in the oven supper. Use more chili powder or add hot sauce if you really want to spice it up! I just want to add: Many people who have tried this recipe have had to cook it longer than I have specified. A hint: I always use a casserole dish with a heavy tight-fitting lid.     this casserole is easily adaptable -- use Mexican Blend cheese instead of cheddar, or chopped jalapenos for lots of heat. We prefer it made with the mild chilies. Really good for a church potluck -- I always leave with an empty dish.

    My friend gave me this simple recipe when I was expecting our first baby. It's a gret fall/winter meal. We also use it for OAMC/freezer meals and it works great (freeze meat/veggies separate from sauce and combine when thawed). Also try with 2 1/4 lbs turkey thighs (skin removed)instead of pork.
