    OAMC - Poultry Plan

    I love OAMC for all the extra time I have to spend with my family. It's easy to cook a little extra during a weekend or double up during the week. All these recipes are good from the freezer! Some of these recipes don't show that they are OAMC or freezer compatible but I have either done them myself or have been told by other chefs here how to go about it.     (UPDATE: I just found out that the creator of this recipe is Recipezaar member dawnie2u! How cool is that?) I just got this recipe from Cook's Country magazine. A cook named Dawn from San Diego, California submitted it to the magazine and won first place in a chicken salad contest. We loved it so much, I thought I'd share it right away. You can find the pickled jalapeños in a can in the Mexican/ethnic section at the supermarket. You can also use this recipe for tuna. I served this over tostadas (crispy fried tortillas).

    I buy boneless skinless chicken thighs from Costco in bulk. I like to cook them in my pressure cooker and then freeze them. Whenever I need a quick meal, I just pull out a cooked thigh and add to pasta, make a sandwich etc. etc. Recipe is for 4 chicken thighs, but the timing should be fine for 10 - 12 thighs, just check after original 10 minutes and cook more if needed. (Timing for bone IN chicken is much different).

    Adapted from Woman's Day magazine. I changed all of the ingredients to lower fat versions, but the original called for the full fat stuff, so by all means use whichever you prefer. Good way to use up a little leftover corn and chicken. If you prefer to not buy pre-bagged salad, just add a little shredded red cabbage,carrots, and sliced radishes to your favorite salad greens. You may also sub any type of cooked beans you prefer - chickpeas, kidney beans, black-eyed peas, etc. Shredded leftover pork or turkey would also be nice in this.

    I just love Salmon and I'd say this is my favorite to date. This has an Asian touch. Lots of flavor. I did make this with Salmon but its possibilities are endless like tuna, Mahi Mahi, shrimp, orange roughy... I bet grilled pineapple in this marinade along with the fish or meat would be great! Cooking in a basket will caramelize the fish giving it a crispness and ease in turning it and cooking in foil will keep it moist as well as ease in flipping the fish. Cooking time is up to you I like my salmon very tender so I tend not to overcook it. This is great served on white rice. Leftovers would be great on a salad. The picture here is the salmon made under the broiler.
