    OAMC - Poultry Plan

    I love OAMC for all the extra time I have to spend with my family. It's easy to cook a little extra during a weekend or double up during the week. All these recipes are good from the freezer! Some of these recipes don't show that they are OAMC or freezer compatible but I have either done them myself or have been told by other chefs here how to go about it.     This comes from a oamc book called "Fix, Freeze, Feast" and is really delicious! Its one of my favorite Thai type dishes and I usually serve it on top of fresh spinach leaves (for me) and on steamed rice (for DH & kiddos) . This is meant as a OAMC dish so it uses a large package of chicken such as you would purchase at a warehouse store. This makes 3 entrees and each entree serves 4-6 people.

    This is my latest concoction in my mission to bring healthier food to my household. Over the past few weeks I have been using Fridays to try out different versions of healthier burgers. Tonight we had these Thai inspired turkey burgers. They had a fresh taste and I think it is important to use the fresh versions of the ingredients rather than dried spices to get that taste. I had mine on a bun with some crisp lettuce and some fat free mayo and ketchup. I bet they would be really nice with some sweet chili sauce in place of the ketchup and mayo though. These could easily be made up and frozen raw to have ready when short of time. Cooking time includes chilling time.

    This is one of my favorite monthly freezer cooking recipes. So easy and cooks up perfectly every time. It's from the Freezer Cooking Manual, but I tweaked it a little. Can be done in endless variations. My favorite combo is chicken, bacon and spinach with swiss cheese. Also great as a vegetarian meal- just skip the meat and add extra veggies.

    Delectable litle pasties or pastry parcels filled with tender chunks of chicken breast and French Boursin cream Cheese, delicious! These are so easy to make, as they use cooked chicken breast, making them very handy for any leftovers you might have. France meets England in these pastry parcels, I have taken the idea of a traditional pasty, then added a little French touch with the Boursin cheese, thus dispensing with any need to make a white sauce to bind the chicken! Great for lunch boxes, picnics, lunch, supper or a light meals or snacks.NB: (I would not advise re-heating these, as the chicken has already been cooked twice before - they are just as delicious warm or cold.)

    For lighter grilling try this spicy burger which freezes well. This came from Cooking Light. I always have leftover Italian turkey sausage after making a batch of these for my freezer, so I use the leftover sausage to make Recipe#244750.

    This is one of my daughter's favorite meals. We use chicken, the original recipe called for pork shoulder. This freezes very well. For an even quicker dinner, precook and freeze the rice in a separate baggie. If making and serving on the same night. Allow 45 minutes for the meat to marinate.

    This recipe is something I make often for my toddler who has allergies, so quick and easy! It doesn't require eggs like most meatballs. When making it for my son, I use the smaller amounts of sweet chili and green onion. I also use homemade bread crumbs from French bread, because of his allergies.I have even skipped the breadcrumbs completely and it worked. We make it as a snack or serve with rice and veggies for dinner. This recipe can be frozen. It easily doubles if you want to take it to a potluck or serve as an appy at a party. Serve with a side of sweet chili sauce to dip, or ketchup for crazy kids like my DS. ;)
