OAMC - Poultry Plan

I love OAMC for all the extra time I have to spend with my family. It's easy to cook a little extra during a weekend or double up during the week. All these recipes are good from the freezer! Some of these recipes don't show that they are OAMC or freezer compatible but I have either done them myself or have been told by other chefs here how to go about it. These are simple to make and throw in the freezer for busy days. They taste best and stay crunchy if reheated in the oven. You can easily double, triple, quadruple, etc. The original recipe calls for 2 cups milk, but I use 1 cup. You may use more or less than I do. The recipe comes from 30 Day Gourmet.

This is one of my daughter's favorite meals. We use chicken, the original recipe called for pork shoulder. This freezes very well. For an even quicker dinner, precook and freeze the rice in a separate baggie. If making and serving on the same night. Allow 45 minutes for the meat to marinate.

This is the way I make my chicken nuggets. My kids love these and I try to keep some on hand in the freezer for quick snacks and meals. The technique came from the 30 day gourmet cookbook. This is an estimate on the crumbs. I normally do a whole bunch of chicken at once and just kind of eyeball the amounts.

This comes from a oamc book called "Fix, Freeze, Feast" and is really delicious! Its one of my favorite Thai type dishes and I usually serve it on top of fresh spinach leaves (for me) and on steamed rice (for DH & kiddos) . This is meant as a OAMC dish so it uses a large package of chicken such as you would purchase at a warehouse store. This makes 3 entrees and each entree serves 4-6 people.

This recipe came to me by way of the February 2005 Zaar recipe adoption. Don't let the amount of vinegar concern you. The finished product does not have a sour taste at all, and I was quite pleased with the recipe. The only changes I made were to reduce the amount of salt and increase the amount of chicken, as the marinade makes a substantial amount. If you choose to halve the recipe, I would recommend using the full amount of the marinade ingredients to keep the flavor in balance. Note: edited 3/19/07 to add freezing instructions for OMAC.

I wanted to make up a batch of something to have something to warm up when I didn't have time to fuss, put some in the freezer and yet have something healthy. Aha I thought, I have some cooked chicken and some egg roll wraps so I came up with this recipe. You can serve them plain, with some Szechuan sauce or even salsa - it's up to you. I loved them plain. They will make great appetizers too. Hope you enjoy them! I said optional to the chillies and hot sauce, but for me the recipe would be bland without, so use as much or as little as you like. Substitute the chicken with seafood roast or whatever leftovers you have. To freeze: Prepare rolls as directed through step 2. Place on a baking sheet, leaving a little space between the rolls. Place in freezer and freeze until firm. Transfer to a large freezer bag. Seal, label and freeze. To serve: Bake rolls from frozen as directed in directions.

I got this from a OAMC website. My family loves it and you can use any kind of jam or preserves. Blackberry, raspberry, peach, basically whatever you like. This works well with the fruit only preserves also. This is good served with noodles or rice to soak up the sauce.

This makes such moist and tender chicken! Before grilling, I sprinkled a little black pepper and some cajun seasoning on this. The prep time includes marinading in the refrigerator for half an hour, although it is better if you can do it longer. ***Edited to add OAMC Instructions at the end of the recipe. I found this on the Bisquick box and we LOVE it! We have it two to three times a week with a large garden salad and light honey dijon mustard - mmm, mmm. One thing I do in addition to the recipe is I spray the pieces with pam cooking spray before putting in the oven. I also bake for 10 minute and then flip and bake for 5 to 10 more. Just found this on the allrecipes.com website and am saving it here (with some variations) so I remember to try it. They recommend serving it over rice. I am planning to double the recipe, but only use 1 1/2 the amount of the sauce. Cooking time here includes an hour of marination.
