Lots of vegetables gives this sauce a meat sauce look but isn't. I had friends come over while it was cooking and taste it a thought it was a meat sauce. I great way to get a variety of vegetables into your family without the I don't like that veggie! This freezes well so you can divide into freezer bags for future use (if it lasts). Use on pasta, in stew, bean dishes, top a pizza, or in soups. This can make this on your stove top as well.
Great for a light supper! Serve with a crusty baguette spread with some roasted garlic, a tossed salad with wild baby greens and a balsamic vinaigrette and you're on your way! Make a double batch and the leftovers freeze well, too.
My family loves this recipe (even my 4 and 2 year old!). I created this recipe when I started Weight Watchers. Hubby likes all ground beef and I like all Boca Meat (meat substitute). If you use Boca Meat 2 shells is only 3 Points. I love to freezer cook as well so make 2, one for now and one for later
I really like the way mashing some of the beans gives the soup a thicker texture. This freezes VERY well, just leave out the cheese.Let it thaw in the fridge, then microwave to heat. Add a Cheese and Herb Corn muffin #22536, for a wonderful under 400 calorie lunch.
These are great little appetizers.
You can freeze them, cook cool and bag.
To re-heat Just remove from freezer, place on cookie sheet and let defrost.
Then warm slowly at 325 frrom5 to 7 minutes..but check them, to not over cook.
While on the South Beach diet, this dish satisfies my craving for the standard chicken parmesan dish.....but this recipe is missing the breadcrumbs. But it's so good you won't miss the breadcrumbs! In the world of low carb dieting, I like to serve this with a green veggie and/or tossed salad.
I went through a veg phase, and this was a staple. I'm back to being an omnivore, but I still make this once a week or so. It's great topped with a little cheese (regular or soy) and a chunk of cornbread.
If you're a Weight Watcher, this is 3 points for a 2 cup serving.
If you're a die-hard carnivore, you can add ground meat, but I think it's much fresher and tastier without.
