    A tangy and very fruity marinade which moistens dry meat, such as lean pork chops; this recipe is so easy, once the chops have been doused in the marinade for a couple of hours, they can be oven baked or barbecued. This marinade also works very well with chicken breasts or turkey fillets. If you are watching your fat intake, cut down on the olive oil - there isn't much, but it does help make the chops juicier! Serve with a selection of vegetables and/or assorted salads & crusty bread - depending on the season! This recipe is based on four people eating with accompaniments.

    I got this recipe from Cooking Light and it is fabulous. Since it is meant for lighter fare, I tried the fat-free feta (recipe didn't call for fat-free version) and it did ruin the taste, so I recommend using regular feta. The recipe calls for bottled minced garlic and a pickled pepperoncini pepper, for some reason I couldn't add that to the ingredient list, so please keep that in mind when gathering your ingredients. I hope you enjoy.

    This authentic recipe was given to me by a Greek co-worker. This is a delicious, sweet, finger-licking Greek dessert. When you are working with phyllo dough, keep a slightly damp towel over your phyllo sheets so they don't dry out. When peeling off a phyllo sheet from the stack, do so by one end and pull away slowly to avoid tears. Small tears won't matter too much in this recipe. However, if you completely rip up a phyllo sheet just discard it and try again!

    This recipe is one of my earliest food memories. Every Christmas Eve, my family enjoys an authentic Swedish Smorgasbord, of which this is an essential part. My mother still tells tales (and I'm 40) of me as a toddler, standing by the dish of meatballs and eating as many as I could hold. These are not spicy, like most Scandinavian food, but have a great flavor and texture. In fact, they are so soft, that I usually chill the meat mixture before rolling and frying to avoid meatballs with flat sides. I've included the directions for the gravy, which I usually don't make, as it's traditional, but the balls are wonderful without it on any buffet table, or as an addition to a potluck. They are also good cold, straight from the fridge. If you like to do OAMC cooking, these freeze beautifully, in fact, I never make less than 100 meatballs at a time, lightly brown them, then flash freeze to finish later. The traditional recipe calls for a mix of beef, pork, and veal- if you object to veal, they work equally well with an even mix of beef and pork. Don't try to use these as an option for spaghetti, the seasonings just don't match. Prep time does not include chilling the meat mixture or the prepared meatballs.

    This is a very simple and basic recipe for pickled beets. I prefer mine spiced up a bit (I throw in 1/2 a cinnamon stick and 4 whole cloves), but this was nice for a change. Not a canning recipe, so easy to throw together for a BBQ! Time does not include 2 hours resting/chilling time - which is truly all that is required for the flavors to come through! NOTE: I made this last evening with one 15oz can of sliced beets, cut them into strips, then halved the amount of vinegar mixture - it came together super quick and was delicious.
