Being in college you gotta work with what you got, especially if your low on money. I came up with this recipe when my boyfriend wanted some cookies but had no money.
P.S.: these are great for post workout snack as well.
Deliciously moist low-sugar chocolate cake, made even more flavorful by the addition of coffee. This is from the Splenda site. Please Note: Splenda Brown Blend is 50% sugar and this recipe uses 1/2 a cup. That's 1/4 cup of sugar in the entire cake. 1/4 cup =4 Tbsp. Splenda Brown has 4g of sugar per tsp =12 g per Tbsp and 48g (1 2/3 oz) in the entire cake. The cake is intended to serve 10. That will give you 4.8g (or 1/8 ounce ounce or 0.169 ounce according to the converter on this site) of sugar per serving. Please decide for yourself if this recipe is safe for you. I, myself, am insulin dependent and I get a higher spike from two slices of 100% whole wheat bread in a sandwich than from a slice of this cake. If you are a brittle diabetic or sensitive to all sugars you may wish to avoid this recipe.
My Husband loves this recipe for frozen yogurt as he is a diabetic. I use low-fat yogurt, you can use regular yogurt for a creamer consistency. Cooking time is freezing time. Recipe is made for electric ice cream freezer.
This healthy snack is not just for diabetics. It's a nice light snack for everyone. I made them for my 4-H project that I took in today to the county fair. I received a Blue Ribbon on them. Make sure you use an artificial sweetener recommended for baking.

this brownie recipe was taken off of fat-free archives- it definitely needs a chocolate sauce or frosting to help keep it moist- when i first attempted this with no sauce it got very dry- but with a chocolate glaze it's very nice

This is a very good alternative to a fattening slice of cheesecake. If you follow a diet plan where you have a carb and a protein using portion control- this is a good one! Tastes fattening to me and anything that tastes fattening is GOOD!!
