My adaptation of Huey's Weiner Schnitzel with a Proper Potato Salad. It is the homemade mayonnaise that makes this potato salad particularly delicious - or as Huey described it "proper" - and making it in a food processor couldn't be easier, although it could, of course, also be made by hand. Huey opts for vegetable oil here rather than olive oil as he insists that it can more effectively be flavoured with other ingredients such as herbs and garlic. The bacon he panfries in olive oil and then adds to the hot potatoes which readily absorb the bacon juices. The leftover eggwash he suggests saving and later adding to some extra eggs to make scrambled eggs. To avoid getting lumps in the breadcrumbs, he suggests using one hand for dipping each schnitzel in the flour and egg and the other hand for dipping the floured, egged schnitzel into the breadcrumbs. If you want to enjoy the potato salad at its most flavoursome, it is essential that it NOT be placed in the fridge but that it is made and eaten on the same day.

This is a recipe that I found on the Radiant Recovery website. A great sugar free marinade for Flank Steak. The original recipe called for 1 tablespoon of dried mustard - I cut it down to 1 teaspoon and also left out the black pepper (I'm allergic to it) and the salt because of the salt content of the tamari sauce. Cooking time is marinating time.

I got this recipe from Family Circle.

Fresh crunchy sprouts make a wonderful addition to any salad or sandwich and they are fun and easy to grow. Great project for kids too! I recently started growing my own onboard our boat Summer Wind. It takes very little space or effort! You can buy sprouting kits (which includes a lid with screens), but I didn't have one on board so used a large wide-mouth canning jar and cheese cloth! I nylon stocking can also be used to cover the jar. Do not use a regular sized canning lid because it will be difficult to remove the sprouts from the jar. Alfalfa sprouts, mung beans and sunflower sprouts are the most popular. I've even used lentil beans and they were great! You can buy seeds at a health food store. Never use seeds from a garden shop or catalog because they are treated with a fungicide.

I enjoy lentils and love brown rice, these burgers sound very good. Found this recipe on Howstuffworks website.

A delicious-sounding pesto I found this morning while at the hairdresser's. I usually come away with a few recipes! :) From the February/March issue of the New Zealand magazine 'dish', and recommended as being excellent with grilled vegetables, salmon, fish and chicken and as mixing well with bitter leaves such as witlof and raddichio.

These onions are great warm or cold. This recipe makes a great appetizer, side dish, topping for fish, sandwiches, potatoes, soups, casseroles or salads. The sky is the limit, a very versatile dish. I hope you will enjoy this simple country dish.

Another great coleslaw! --- if your coleslaw mix already has carrot included you may omit the shredded carrot, you will love this! :) --- also see my recipe#102617

    Recipe #355866

This one is great. From the Bartender's Guide. Sour apple schnapps instead of ordinary apple schnapps will enhance the sharpness, as will a splash of lemon juice. If you have applesauce at hand, you can use that instead of the apple juice or substitute applejack to increase the alcohol content.

My Mom NEVER buys extra firm tofu, just doesn't like the texture. One day (about 20 years ago) she bought extra firm by mistake. She didn't want to go back to the store, and didn't want to waste perfectly good food, so she came up with this recipe that has become a favorite for me. Now, she occassionally buys extra firm tofu on purpose! I love this and make it often when I want a simple quick lunch or supper.

    Recipe #366933

I made this smoothie, trying to copy a store-bought kind and this is so much better! The fresh pineapple gives it such a light, fresh flavour- it's just not the same with canned pineapple. If any of this smoothie makes it to the fridge, you may like to water it down with some pineapple juice as the coconut milk thickens as it cools.

    Recipe #365405

Dijon, orange juice and scallions, most of which are in your fridge. Easy, low in carbs and so delish. I found this on the eating well website. Hope you enjoy. Original recipe called for 2 T. dijon, we have chosen to cut back to 1 tablespoon and love it that way. Sometimes we broil in the oven and to keep the steaks moist, I add some of the leftover marinade about half way through broiling.

    Recipe #363919

A simple variation which makes all the difference in flavour to basic mashed potatoes. Adapted from the Australian Women's Weekly Casseroles cookbook.
