This is easy to make, freezes well and adds a nice kick to almost any savory dish. Recipe is from Rachael Ray. You can mix this pesto with sour cream for a dip. Brush it onto grilled meats. Spread onto pizza crust. Beat into eggs before cooking. Or stir into vegetable soups.

The original uses frozen beans and red wine vinegar, and you can, too, if you'd like. It also calls for boiling the beans, but I prefer them steamed. I also leave the pimientos out occasionally.

DOUGH NEEDS CHILLED OVERNIGHT and is not included in prep time
Plastic wrap boxes work well for shaping square cookies. Line box with plastic wrap and pack dough firmly inside. Wash and dry frozen juice containers and fill with dough for perfectly round cookies. Simply remove bottom of containers and push out the chilled dough. Also, as a substitute for the cranberries and the pistachios, use any combination of your favourite dried fruit and nuts.

Rolls in refrigerator for 3 months or freezer for 6 months
This is Southern cornbread, not a sweet cornbread. White cornmeal is essential. Make sure you cut the egg into the cornmeal with a fork...not a mixer or whisk. To make this cornbread heavenly, you are looking for a nice pourable batter, similar to pancake batter. This is best made in a seasoned cast iron skillet.
