Very bold. If you are not a garlic lover, don't try this recipe. This is an adaptation of Spaghetti a la Carbanora. The garlic and egg are both raw, but don't worry, the butter melts, the egg cooks ever so slightly, the cheese melts and an indescribably heavenly amalgamation takes place. A rich savory vegetarian chili that's easy to make and smells wonderful. High in fiber and low in fat. It even looks like meaty chili (see pic!). Serve topped with cheese, onions and sour cream with cornbread or chips for a satisfying meal!

I got this from the February 2005 issue of BBC Good Food and adjusted slightly for our tastes. I'm not sure how authentically Moroccan it is (when we were there we didn't come across any soups like this) but it definitely has those north-African flavours and best of all it is super healthy for you. If you don't have harissa you can use your favourite hot sauce or chili pepper.
