    I found an oatmeal pancake recipe that sounded really good but it wasn't gluten free. I changed and adapted it to suit my tastes, made it gluten free, and, Voila! This is my favorite pancake recipe. It is hearty, heart-healthy, high protein, low glycemic and packs fiber for a satisfying breakfast that will carry you a long way. Note: the oats, milk and yogurt need to soak together for 8 hours before mixing in remaining ingredients. Freeze individual pancakes and you can reheat them in the oven (or microwave). Using a moderate oven, I wrap 2 pancakes in foil and heat for about 15 minutes, no thawing necessary. These make a great sandwich with your favorite nut butter. They are also great with your favorite jam, compote, syrup or combination topped with whipped cream!

    This is a mix to create individual servings like the Warm Delights, cake in a mug/cup craze. It is "just add water". It makes a rich, fudgy cake. This is suitable for gift giving. It does not use a cake mix to start, and does not use egg. It is prepared in the microwave. 4 Tbl of mix filled my mug about half full, it does rise a little when cooking. This amount of mix will make 11 cakes, or if your mug is big enough for a double batch it will make 5. If you just want to make one just decrease the yield to 1 cake.     I can't believe this isn't already posted. This is a super easy way to make cornbread fast. Keep this in your pantry and all you will need to add is some water, oil and an egg for cornbread. The recipe is from Make-A-Mix Cookery. I usually use 1/2 whole wheat flour and 1/2 all-purpose flour.

    This came from my Southern Living magazine in an article about homemade food gifts for the holidays. I think nothing says love better than something homemade. It means you took time and thought into making someone a gift.     This is my favorite muffin recipe. They come out so moist and delicious. My garden was over-run with zucchini so I made these muffins, froze them and had them through out the year. They freeze very well.

    A Healthy snack to make, and enjoy. Haven't had a chance to make this yet myself. Use your favorite dried fruit, figs, dates dried cranberries, cherries or blueberries in place of the apricots and raisins. Enjoy.
