This is my favorite muffin recipe. They come out so moist and delicious. My garden was over-run with zucchini so I made these muffins, froze them and had them through out the year. They freeze very well.
Spice this up even further by adding 1 teaspoon each nutmeg and allspice, and 1/4 teaspoon white pepper. You may choose to omit the French vanilla creamer, and use 2 teaspoons vanilla extract instead. To do so, mix the vanilla into the sugar, let it dry, then break the sugar into small lumps. Ras el Hanout ( "top of the shop" ) is a spice mixture from Morocco that can contain anywhere from 10-100 different spices. After checking cookbooks & searching online I decided on this combination for this spice mix.
This came from my Southern Living magazine in an article about homemade food gifts for the holidays. I think nothing says love better than something homemade. It means you took time and thought into making someone a gift. Their suggestions for use are to toss with pasta, veggies, or popcorn, sprinkle over salads, mix with butter and baste hot baked bread with it, or use it in flour for breading chicken.
I can't believe this isn't already posted. This is a super easy way to make cornbread fast. Keep this in your pantry and all you will need to add is some water, oil and an egg for cornbread. The recipe is from Make-A-Mix Cookery. I usually use 1/2 whole wheat flour and 1/2 all-purpose flour.
This is a mix to create individual servings like the Warm Delights, cake in a mug/cup craze. It is "just add water". It makes a rich, fudgy cake. This is suitable for gift giving. It does not use a cake mix to start, and does not use egg. It is prepared in the microwave. 4 Tbl of mix filled my mug about half full, it does rise a little when cooking. This amount of mix will make 11 cakes, or if your mug is big enough for a double batch it will make 5. If you just want to make one just decrease the yield to 1 cake. A Healthy snack to make, and enjoy. Haven't had a chance to make this yet myself. Use your favorite dried fruit, figs, dates dried cranberries, cherries or blueberries in place of the apricots and raisins. Enjoy.
I found this online while searching cookies in jar recipes. I tried it out and it was really tasty and different. I gave these as small gifts during the holidays and everyone seemed to love them. EDITED TO ADD: A reviewer noted that if you are making these cookies for yourself and double the recipe, the ingredients in the instructions DO NOT change. :)

Fill jars with the mix, cover the lids with a festive swath of fabric, and include peppermint "stirring" sticks for added flavor and color. Try adding to a basket with mugs, spoons, marshmallows, whipped cream and maybe a good movie!
