    In college, choosing macaroni and cheese or juniorettes is always a first choice- But sometimes, it just doesn't cut it. Home cooked meals are very necessary every once in awhile, as you may know. Slow cooker recipes are great in apartments, especially when space is limited to prepare a feast. This takes only minutes to prepare, then let it cook while you study or rest for 2 1/2 hours. *Note: Veggie crumbles are a heat and serve vegetarian meat substitute- If you don't want this to be vegetarian, you can substitute 8 ounces ground beef, browned, for the crumbles.

    I saw this recipe made on the new low carb cooking show on Food Network. I tried the recipe tonight and it is really so good - this is my spin on the recipe. This time, I omitted the rosemary and used raw minced garlic, but you may also use a few cloves of roasted garlic if you prefer. This version is different from many others as there is no sour cream and no mayonnaise. Real comfort without all that starch. (Note: Smart Balance is a lower calorie, cholesterol reducing butter substitute).

If you use a couple of 8 oz. packages of diced tofu, found in the produce section of your grocery store, and bottled minced ginger, this goes together in no time.     Healthy and easy rice cooker dish that you don't have to babysit, inspired by a Moosewood creation. This will be more like a casserole consistency than a stew, because the barley soaks up the cooking liquid. You can sub a can of diced tomatoes for the tomato paste and water. You may top with shredded cheddar cheese if you wish. This reheats wonderfully.

    When I was child, my oldest sister would take my nephew and I to a pizza place called 'Godfathers Pizza'- there are still a few around on the East Coast. I fell head over heels in love with their baked spaghetti! A dish they would make with the leftover spaghetti from the day before. For years I craved the specific flavor of the Godfather's sauce until one day I bought a jar of Classico Italian Sausage with Peppers and Onions spaghetti sauce. WOW! Was I shocked and happy to find it was almost exactly like I had remembered the Godfather's sauce to be. Recently I discovered that Newman's Own also makes a close second called Sockarooni Sauce! Either way, here is my recipe for Baked Spaghetti. I also encourage you to use either of these sauces on homemade pizza! Enjoy!
