Look for recipes that contain less then 15 grams of fat per serving; and, the fat sources are primarily heart healthy, such as from olive oil or skinless poultry. Tip: 2 skinless chicken thighs substitute nicely for hamhocks.

From It's finally here! What everyone's been waiting for! Just in time for winter, this soup is sure to warm your soul with it's savory flavor and wonderful aroma. I've asked many an Olive Garden waiter for this recipe, but none gave it to me in detail. One waiter told me the secret ingredient was to add a little red wine to the stock, but I'll leave that up to you to try.

I was shopping in a Bulk Food Store one day and overheard a young man asking the clerk where some ingredients would be....said he had to buy for "the best black bean soup in the world"...had the recipe in his hand. Long story short....clerk made a copy for me, and he was right!! Turns out, I see now as I go to post, that it is from 'Moosewood Restaurant Cooks at Home'. I had never heard of Moosewood Restaurant 'til I came to 'Zaar.....must be a super place to eat! Prep. time includes cook time.

A delectable soup with the flavors of the southwest. The roasted red pepper may seems daunting but it is a very simple and easy task and smells and tastes wonderful. All the flavors come together with the red pepper and the corn, and although this soup serves 8-10, you may find yourself serving less people when you are wanting more for yourself...

This soup is to die for! I eat it bowl by bowl until it's gone and never get tired of it. It's perfect for anyone on a diet like Weight Watchers or South Beach. Adapted from TOH Healthy Cooking Dec 2008.

When I first made this I didn't think my kids would eat it. They LOVED it and I ended up having to make another batch. Try it with Tostitos Hint of Lime tortilla chips. My kids like to scoop the soup up with the chips! You can also make this very low fat, if you so choose.
