    Cooking the meatballs in simmering pasta sauce will not only add so much extra flavor to the sauce the meatballs will be melt-in-your-mouth tender, you may of course oven-bake the meatballs for about 25 minutes, --- don't be afraid to add in more Parmesan cheese and a little more milk, there is no need to measure exactly, this recipe is pretty much foolproof, leftover cooked meatballs make a wonderful pizza topping just slice thinly and freeze until ready to use ----- these also make wonderful juicy burgers shaped into patties-- for more of my tried and true recipes check out my food blog at

    Although it's called cucumber potato salad, the recipe doesn't even call for cucumbers. It calls for cucumber dressing. I think next time this would be good if you threw in a few cucumbers too. This recipe serves 36 and is designed for large gatherings. I made 1/5th of the recipe or so and was pleasantly surprised at the flavor of the cucumber dressing. I must confess that I added a few hard-boiled eggs, used the celery ribs and the leaves, threw in some dill pickle juice, and I couldn't resist a few crunchy garlic dill pickles in the mixture. The recipe is great just by itself, but I love dill pickles and eggs in potato salad.     I found the original recipe for this salad on "eHow". Because the recipe was written with enthusiasm, and it had pickles and pimientos in it, I was intrigued. I now make a double batch every two to three weeks; it's a great snack, and it stores in the refrigerator for up to a week! This salad is addicting! My hubby, who is not a tuna fan, absolutely loves this salad. This is great for potlucks and barbeques. It was requested at our family Christmas Party as a side dish; how can you go wrong with the green and red coloring throughout. Note: Accent is a flavor enhancer that contains MSG, so leave it out if anyone is sensitive to MSG. Don't be afraid to make a whole batch even for a small family, because the leftovers just get better and better with each passing day.
